Ingredients

    

  • 200 g buckwheat flour

        
  • 200 ml organic or Greek yogurt

        
  • 2 tablespoons baking powder

        
  • 1 slize of  butter

        
  • 4 tablespoons unsweetened maple syrup (sap from the Canadian     maple tree)

        
  • 4 Jonagold apples

        
  • 3 eggs

        
  • 2 tablespoons ground cinnamon

        
  • Baking paper and a loaf pan

        
  • A grater for the apples

Preparation

    

  1. Dry ingredients:
    In a bowl, combine the  buckwheat flour, baking powder, and cinnamon. Mix well and set aside.

        
  2. Wet ingredients:
    In another bowl, beat the eggs, maple syrup, and yogurt. Mix until smooth. melt 1 slize of butter and mix all together !

        
  3. Combine:
    Add the wet mixture to the dry ingredients and fold together with a spatula.The batter will be  thick, yet airy.

        
  4. Add the apples:
    Grate two large apples  (not too finely) and fold them into the batter.
    Peel the remaining two apples, remove the cores, and slice them thinly.

        
  5. Baking:
    Line a loaf pan with baking paper and pour in the batter. Arrange the apple slices on top like roof tiles and gently press them into the dough.
    Preheat the oven to 200°C (392°F) and bake in the middle of the oven for about 1 hour.
    After 45 minutes, test with a  skewer if it comes out clean, the cake is done.
    If the apple slices start to brown too quickly, cover with foil (preferably aluminum-free).

Soft, naturally sweetened, and completely gluten-free a perfect treat with your coffee or as a wholesome snack.

Buckwheat

flour is healthy because it is rich in fiber, vitamins (such as B1 and B6), and minerals (such as magnesium). 

It is gluten-free, easy to digest, has a low glycemic index, and may contribute to heart and blood vessel health due to the antioxidant rutin. However, since it doesn’t have the same nutritional profile as grains, it’s important to combine it with a variety of other foods.

Maple syrup 

is not “healthy” as such, but it can be a slightly healthier choice than regular sugar because it contains antioxidants and minerals like zinc, manganese, calcium, and potassium.

However, it is still a form of sugar with a high carbohydrate and calorie content, so it should be consumed in moderation. The syrup has a lower glycemic index than regular sugar, which means it causes a slower rise in blood sugar levels.

Cinnamon

is very healthy due to its high concentration of antioxidants, anti-inflammatory properties, and positive effects on blood sugar levels and cholesterol. It may help reduce the risk of cardiovascular disease, decrease inflammation, and support metabolism. 

However, it’s important to consume it in moderation and to choose Ceylon cinnamon, as Cassia cinnamon contains higher amounts of the compound coumarin.
